Bistrot La Minette to Cook Corsican Dinner

Though just North of Italy’s Sardinia, Corsica is a mountainous French region known for its rich traditions producing olive oil, wine, citrus fruits and chestnuts. Surrounded on all sides by water, Corsica is also known for its seafood.

On Wednesday, July 27 and Thursday, July 28, Bistrot La Minette will be taking its diners on a culinary expedition to Corsica during its 2011 Tour de France.

Corsica’s close proximity to Italy has influenced not only its inhabitants and language, but its food as well. The four-course menu that Chef Peter Woolsey will create is sure to highlight those similarities.

Dinner is $35 per person or $50 with a wine pairing. The menu is below.

Salade de Poulpe Squid salad, roasted red peppers, lettuces
Spaghetti à la Boutargue Spaghetti, Corsican caviar, garlic, olive oil
Fricasée de Lapereau aux Citron Lemon and rabbit fricassee, Corsican tomato confit
Flan aux Chataigne Vanilla chestnut flan
